I absolutely love sweet potatoes and last time I did the Whole30 I ate this Paleo Whole30 Sweet Potato Breakfast Hash a few times a week. This is also a good meal for using up any veggies you have sitting in the refrigerator. When eating Paleo it’s good to have a few go to breakfasts that you really like. I almost always have all of these ingredients on hand for a quick healthy and hearty breakfast.
Ingredients:
- 4 large eggs
- 2 small yams peeled and cut into approx same size pieces
- sprig of fresh rosemary
- ½ onion
- 2 large garlic cloves
- a few grinds of TJ’s everyday seasoning
- few grinds of black pepper
- few grinds of garlic and sea salt or 1 tsp of garlic salt
- whatever veggies you have on hand ( I usually use a cruciferous mix with brussel sprouts and cabbage, some greens, bell peppers, onions and mushroom) but you can use whatever you like
Directions: Saute yams in a little olive oil add spices and chopped onion In separate pan saute whatever veggies you would like in olive oil and add spices Cook two eggs however you like I like to fry mine in a little olive or coconut oil and leave the yolks runny Yams are done when you can easily put a fork in them put them on the plate with your veggies and top with the eggs how ever you like them I like mine to have a runny yolk and mix everything together.
