Sugar Free Honey Roasted Pecans

I’ve always loved honey roasted and candied nuts of all kinds. When I cut refined sugar out of my diet I decided to try to recreate them so that I could still enjoy one of my favorite snacks. My sugar free honey roasted pecans are simple and require only 3 ingredients and a bit of time in the oven. If you are looking for a sweet healthy and sugar free snack than these sugar free honey roasted pecans are for you.
They can be kept in an airtight container for up to a week to grab for a quick healthy snack. I like mine mildly sweet if you want yours really sweet you can repeat the process and cover them a second time when you stir after the first 15 minutes. Just double coconut oil and honey and coat the pecans a second time.

Ingredients:

  • 1.5 cups pecans
  • 1 tsp. coconut oil
  • 2 tbsp. honey

Directions: Preheat oven to 300 degrees. Line a cookie sheet with parchment paper or foil. Places pecans on sheet in a single layer. Bake for 15 min. While pecans are in the oven melt coconut oil in a small saucepan over low heat. Once melted add honey and stir until dissolved. Keep warm until your 15 minutes of baking the pecans is up. Remove pecans from oven. Reduce heat to 250 degrees. Drizzle mixture over the top of the and stir to coat all pecans and make sure they are all in a single layer. Bake 15 minutes, stir and return to single layer. Place pecans back in oven and bake another 15 minutes. Remove pecans and let cool for at least 30 minutes.
