Coconut Cream Chia Seed Pudding – Paleo Dessert Recipes

Sometimes I just need an easy sweet treat but want to make sure I am sticking to my healthy eating plan. My Coconut Cream Chia Seed Pudding is my go to delicious healthy clean eating dessert. It is non dairy and can be made Paleo or Whole30 by omitting the honey. Chia seeds are great for helping with weight loss they are filling and boost metabolism I often add them to smoothies and other drinks to help fill me up. Chia seeds are a great source of Omega 3’s and aid in digestion. You can make this the night before and have it for a quick breakfast or have it in the refrigerator when you are craving something sweet. In the right dish with the right toppings it can be served as a healthy alternative to a decadent dessert for a dinner party.

Ingredients:

  • 1 cup coconut milk
  • 1 small can coconut cream (5oz.)
  • 1/2 cup chia seeds
  • 1/4 tsp. vanilla
  • 1 tbsp raw honey (Optional: For Paleo or Whole30 with the coconut, vanilla and fruit keep it’s sweet enough)
  • 1/4 cup unsweetened coconut flakes plus more for topping
  • fresh fruit
