We’ve all heard that if you’re not feeling well you should grab a warm bowl of chicken soup. If you really want to feel better you should try my recipe for my Ginger Garlic Chicken Bone Broth Immunity Soup. Not only is it delicious it is also full of immunity boosting ingredients that will kick that bug to the curb. Whenever I am beginning to feel a sickness coming on this is my go to soup to stop that sickness in it’s tracks. Bone broth is a great immune booster it’s high in calcium, magnesium and collagen. Add ginger, garlic and onions to that broth and you’ve got a flavorful soup to cure what ails you. This soup freezes well and can be kept for when you need it. When I make it for my son I add either pasta or rice in order to lessen the spice a bit for him to enjoy. If it’s still too spicy you could always mix in some plain yogurt or sour cream.
Ingredients:
- 3.5lb Whole Chicken
- 1 large carrot
- 3 stalks of celery
- 1/2 to 1 Anaheim pepper chopped
- Fresh garlic cloves (8 whole and 8 sliced)
- 5 Bay leaves
- 1 large yellow onion
- 1 large thinly sliced leek
- 10-12 grinds coarse black pepper
- 1 tsp salt
- 1 tsp garlic salt
- 1/2 tsp red pepper flakes (optional)
- 2 tbsp Apple Cider Vinegar
Directions: Place chicken in large pot and add all ingredients. Bring to boil over medium high heat. Boil for 15 minutes. Reduce to simmer and place lid on top. Simmer for 1 hour. Remove chicken from pot and remove chicken. Let chicken cool enough to remove meat. Place chicken bones back in pot and continue to simmer for 2 to 6 hours. Remove bones and add back some or all of reserved chicken meat. Add more pepper, garlic salt or red pepper flakes to taste. Here you can also add pasta, rice, quinoa or other veggies to make it your own. Like I mentioned before it may have a little too much flavor for kids and adding to it tones it down a bit.
