This is a recipe my mom has been making for years and one of our favorites. The original Cilantro Lime Corn Salad calls for jarred mayonnaise. I have just modified the dressing since jarred mayonnaise definitely isn’t on my list of good things for me to eat. I use my homemade mayonnaise recipe to make the dressing for this and it turns out great and remains as delicious if not more than before.
Corn is not paleo but this salad is gluten and dairy free. This is a refreshing zesty side dish to go with any meal. I love it with chicken or goes great with BBQ.
Ingredients:
- 8 ears of fresh corn shucked
- 1 red onion if its small or half of a large one
- 1 bunch of cilantro removes from stems and finely chopped
- 1 lime juiced
- 1/2 cup homemade mayonnaise
Directions:
Fill a pot with enough water to cover ears of corn. Add 1/2 tablespoon of salt.
Bring to a boil and add corn. Return to boil and boil for 5 minutes. Remove corn and let cool.
While waiting for them to cool prep cilantro and chop onion.
When cool enough cut corn from ears place in bowl add chopped cilantro and onion.
In a small bowl mix mayonnaise and lime juice.
Pour over corn and vegetable mixture and mix.
Serve right away or refrigerate. The flavors come together as it sits.
