Paleo Whole 30 Homemade Mayonnaise

I use my Paleo Whole 30 Homemade Mayonnaise as a base to many different dressings, tartar sauce, sriracha dipping sauce or just to dip steamed veggies in like asparagus or artichokes. Mayonnaise may seem like something unhealthy to most but if you make it yourself it can be a great dressing or dipping sauce base.

Many people have the misconception that fat is unhealthy for you and that is not always the case as long as you are choosing the right fats and of course using things like my Paleo Whole 30 Homemade Mayonnaise sparingly. This recipe can be great to add to many healthy meals to add a little flavor. This recipe is so easy and delicious you will not go back to store bought mayonnaise again.

If you don’t have an immersion blender I recommend getting one they are easy to use and clean and great for making sauces, soups, smoothies. Don’t worry you can also use a food processor or blender to make this delicious mayo!

For this recipe I use mostly avocado oil but you can use any light tasting oil. I’ve tried it with olive oil, a sunflower coconut blend or a mixture of these 3 oils. I’ve found I prefer avocado oil with a little bit of sunflower/coconut oil.

First find a container that can handle the immersion blender and is deep enough so that you don’t get mayo everywhere once it emulsifies. I use a mason jar like this because it is perfect to store it in the refrigerator. You can store it for about a week. Just make sure your egg is fresh and a week is not past the expiration date.

Ingredients:

  • 1 fresh egg
  • a little less than a cup of a light flavored oil (less oil if you want it thicker)
  • 1 clove of fresh garlic (this gives it some bite you can omit or use less if you want of a kick)
  • 1/2 tsp red wine vinegar
  • 1/2 tsp apple cider vinegar
  • 1/2 a fresh lemon-juiced
  • a few grinds of Trader Joe’s everyday seasoning
  • a few grinds of black pepper
  • a couple grinds of pink Himalayan sea salt or whatever you have

Directions:

Place egg in jar or bowl.

Add vinegar, garlic clove and spices.

Add the oil.

Place immersion blender down to bottom of container and turn on. You will be surprised how quickly it emulsifies. Slowly move blender up and down making sure to get it mixed well.
