Sweet Potato Breakfast Hash

Serves 2

1

Ingredients:

4 large eggs

2 small yams peeled and cut into approx same size pieces

sprig of fresh rosemary

½ onion

2 large garlic cloves

a few grinds of TJ’s everyday seasoning

few grinds of black pepper

few grinds of garlic and sea salt or 1 tsp of garlic salt

whatever veggies you have on hand ( I usually use a cruciferous mix, some greens, bell peppers, onions and mushroom) you can use whatever you like

 

Saute yams in a little olive oil add spices and chopped onion

In separate pan saute whatever veggies you would like in olive oil and add spices

Cook two eggs however you like I like to fry mine in a little olive or coconut oil and leave the yolks runny

Yams are done when you can easily put a fork in them put them on the plate with your veggies and top with the eggs.
