Quinoa Salad

Serves 3-4

Quinoa Salad

 

Ingredients:

1 cup cooked quinoa

2 small cucumber

¼ red onion

1 tomato or handful of cherry tomatoes

1 tbsp. red wine vinegar

1/2 tbsp. olive oil

clove of garlic crushed

a few grinds of TJ’s everyday seasoning

few grinds of black pepper

Juice of 1 lemon

fresh mint leave approx. 1 tbsp finely chopped plus more for garnish

Feta cheese (optional)

Instructions:

Place first 4 ingredients in a large bowl. Whisk remaining ingredients except for cheese if you choose to add it in a small bowl. Add to quinoa and veggies mix well. Crumble and add cheese mix lightly if desired.

You can eat this right away but it does taste more flavorful after a few hours or overnight in the refrigerator.
