Asian sesame asparagus

This Asian Sesame Asparagus is a recipe that my family has been making for years. I modified it to make it healthier by omitting the sugar and using honey and also adding some fresh ginger. It makes a delicious easy side dish that you can make a day ahead!

Ingredients:

  • 1-1.5 lbs asparagus (ends trimmed)
  • 1/2 cup rice vinegar
  • 3 tbsp. sesame oil
  • 2 tbsp. honey
  • 1 tbsp fresh grated ginger
  • 2 tbsp. sesame seeds

Directions:

Steam the asparagus for about 5 to 8 minutes depending on thickness of asparagus. Use a fork to check should be al dente fork should go through but not too soft .

In a sauce pan combine rice vinegar, sesame oil, honey and ginger. Simmer over medium low heat stirring until honey is dissolved.

Place asparagus in an airtight container that allows asparagus to be submerged in the liquid. Place in refrigerator at least over night. Make sure to stir or flip over so all asparagus can be marinated.

Before serving, toast sesame seeds until light brown in a pan over medium heat.

Drain asparagus and place on platter sprinkle sesame seeds over the top and serve.
