Kale and quinoa have become two of my favorite things they are delicious (that is if made correctly) and so nutritious! I came up with this Asian Kale Quinoa Salad after having a salad similar while at San Francisco International. I am always looking for something healthy to snack on when travelling if I didn’t have time to pack my own snacks. Napa Farms Market at SFO has lots of yummy and healthy options including my favorite drink Kombucha but that’s a whole other post coming soon!
Ingredients:
- 2 tbsp avocado oil
- 1 tsp apple cider vinegar
- 1 tbsp rice wine vinegar
- about 1 tbsp of freshly grated ginger
- 1 tsp honey
- 1 tbsp sesame oil
- 1 tsp soy sauce (make sure its gluten free/tamari if making gluten free)
- 5 oz bag of Kale
- 1/2 cup cooked quinoa
- handful of almonds (already slivered or just chop them up a little yourself)
- 1 green onion chopped
Directions:
In a food processor or with an immersion blender blend or process first 7 ingredients to make dressing
Place kale in large bowl slowly add dressing and massage with hands into the kale for a few minutes
add quinoa, green onions and almonds
Mix well and serve
