I grew up eating lamb chops and its a meat I always seem to really enjoy but don’t have too often I need to make them more. My Paleo Garlic Rosemary Lamb Chops are my quick and easy go to recipe but they are also elegant enough for a nice dinner party.

I love fresh herbs as you can probably tell from going through my blog and fresh rosemary and garlic makes all the difference in this recipe. These lamb chops are not only delicious but they are Paleo, Whole30, and gluten/dairy/sugar free.

Ingredients:

  • 4 lamb loin chops
  • 4-5 large cloves of garlic
  • 2 large sprigs of rosemary
  • Coarse ground black pepper
  • Trader Joe’s Everyday Seasoning
  • Course ground sea salt
  • Olive Oil

Directions:

Set out lamb chops. I like to set them out at least an hour or so before broiling.

Generously grind salt and pepper on each side of chops.

Preheat oven to broil.

Finely chop or mince garlic, remove rosemary from stem.

Place garlic and rosemary in a bowl add a few good grinds of TJ’s everyday seasoning and about a tablespoon of olive oil and stir.

Rub mixture onto each side of the chops.

Place chops in oven not directly under the heat make sure you have a a few inches between heating element and chops.

Flip chops over after approx 5-6 minutes and broil 5 more minutes on the other side. They will be medium rare.  Cut to check for you desired done-ness or use a meat thermometer.
