So it’s that time of year again I am seeing pomegranates everywhere. I love pomegranates and often forget about them until they come into season again. My Apple, Almond and Arugula Salad with Homemade Pomegranate Vinaigrette is full of superfoods including pomegranate juice and seeds.
Just in case you needed more reasons to eat pomegranates besides the fact that they are delicious….here ya go! Pomegranates are full of anti oxidants and other nutrients like fiber, vitamins C & K, potassium, folate and protein. They have also been said to promote heart health, reduce inflammation and fight cancer.
Ingredients:
- Fresh spinach
- Fresh arugula
- Pomegranate
- 1/2 granny smith apple cut into bite size pieces
- 1/4 to 1/2 cup slivered almonds
- Dijon mustard
- Honey
- Olive Oil
- Red wine vinegar
- Fresh ground black pepper (a few grinds)
Directions:
Cut the top off the pomegranate and squeeze as much juice out as you can. You will need about a tbsp for the dressing. Pick out all of the seeds and discard rest of pomegranate.
In a deep bowl or cup place pomegranate juice, dijon mustard, honey olive oil, red wine vinegar and pepper. Use immersion blender or whisk to mix well.
Place arugula, spinach in a bowl pour dressing over and toss. Add apple and almonds.
